These questions and more are expertly answered in The Eye and Nutrition, by Lucio Buratto. This book is in part a nutritional guide and in part a cookbook filled with such mouth watering recipes that you'll not even be aware that you are eating healthily.

Dr. Buratto is an internationally renowned eye surgeon. In this book he has brought to the fore the latest information about eye health, nutrition and information on how our eyes have changed over the centuries due to changes in our eating habits and how we use our eyes. This book is divided into four parts. The first three parts examine the role that nutrition plays in eye health, what constitutes a healthy diet, how diet can affect the structure of the eyes and the role that diet plays in eye disease and prevention. The cookbook portion of this book is organized along the lines of a traditional cookbook, with the recipes grouped thematically into categories such as snacks, pasta, meat, fish, vegetables, fruit, juices, and desserts. Each recipe begins with a list of ingredients and a note on how many serving each recipe will make. This is followed by directions on how to prepare each dish. These directions are easy to follow, and overall, these recipes are all easy, uncomplicated, and quick to prepare. Even novice cooks should have no problems recreating these dishes. Each recipe also includes a brief nutritional chart showing how many calories are in each dish, along with the amount of protein, fats, carbohydrates, fiber, and cholesterol each contains. In addition, there is a side bar that explains what is in the dish that makes it good for your eyes, including information on why the selected items are good for you. On a side note, this book was originally published in Italy, and many of the recipes have a delicious Italian flare that can be seen, in part, by the inclusion of a plethora of risotto and pasta recipes. However, even if you do not generally like Italian fare, you will still find a wealth of recipes to tempt your palate.

Throughout, this book is enhanced by the inclusion of eye popping illustrations of the various dishes. As well, The Eye and Nutrition includes a description of the various types of kitchen equipment and utensils that you should have in your kitchen. An overview of the various types of metals that you will find used in kitchen equipment is discussed, along with their positive and negative attributes. A guide to measurements and a glossary are also included.

The Eye and Nutrition is a fascinating and informative book to read, and a wonderful cookbook. I especially liked that in the section on vegetables, they provide a slew of recipes for both cooked and raw vegetables, they also included recipes for the various sauces and condiments used in the main recipes.

The Eye and Nutrition is ideal for use as a general cookbook, as a coffee table book, and it would make a wonderful gift. It is also a book that is essential reading for anyone interested in eye health, nutrition, and how the two subjects are interrelated.
