Vegetarian meals from a slow cooker (a.k.a. crock- pot)? You bet! In Fresh From the Vegetarian Slow Cooker Robin Robertson offers 200 tasty dishes that take you from appetizers through desert. Robertson has written a number of vegetarian cookbooks, including Vegan Planet, The Vegetarian Meat & Potatoes Cookbook, the Soy Gourmet, and The Sacred Kitchen to name just a few. Throughout this cookbook, her instructions are clear and easy to follow and they use healthy ingredients that you should be able to easily find in most grocery stores, so there is no need to hunt up a specialty shop to make these dishes.
The recipes in this cookbook are organized similar to that of a traditional cookbook - other than that there is not a category for meat dishes ;-) The book begins with an overview on how to use a slow cooker and how it can be used effectively cooking vegetarian dishes. The recipes, themselves, are organized in the following categories:
Appetizers and Snacks
Soups and Chowders
Chilis and Stews
Beans and Grains
Potpies, Pastas, and other Main Dishes
The Stuffing and the Stuffed
Vegetables
Condiments - Chutneys & Butters
Desserts from the Slow Cooker
Breakfast and Bread
Hot Drinks from the Electric Punch Bowl
Robertson provides a nice assortment of recipes in this cookbook, and you are sure to find dishes that will appeal to every member of your family - even for the carnivores in your life. While I regularly use a slow cooker for my recipes that call for dried beans and for soups, stews, and similar dishes. I never thought of using a slow cooker for pasta dishes - or use it to make the moistest cakes you've ever tasted. You can even use a slow cooker to make cheesecake! Robertson has opened my eyes to just how versatile the slow cooker really is. While the recipes are my favorite aspect of this cookbook, another wonderful aspect is the print size. My copy of this cookbook was printed in a 20-point font. No need to juggle a spatula and a magnifier for me to read it - what a joy. If you don't need print so big, this cookbook in also available in smaller font sizes. It is also available in an even larger font size.
To give you a taste of the variety of dishes that you can make with a slow cooker - here is a listing of my top ten favorite recipes from this yummy cookbook that should be on the bookshelf of every vegetarian - as well as for anyone who is looking for easy to make, healthy meals that you can make and forget about until you are ready to eat!
